Kathy grew up on a dairy farm in Millard, Nebraska. Her parents instilled a hard work ethic into her and her older brother while keeping the Christian faith the center of their lives. Kathy taught her two sons the same values. Working countless hours in her restaurants, but never missing a Sunday sermon. Kathy turned her talent and passion for cooking into a career. She owned two restaurants, Boondockers and Hillside Cafe.
Earlier this year, Kathy was diagnosed with lung cancer. People tell Kathy all the time, she is the most cheerful and positive person they have met that has cancer. Kathy says, “I’m this way because I know where I’m going….Heaven”. Over the last few months, she has enjoyed spending time and making memories with her sons, four grandchildren, and one great-granddaughter. Kathy’s birthday was coming up and she wanted to do something extra special this year with her family; have family photos taken and enjoy her favorite meal, Red Lobster! That’s when Jennifer from Southwest Iowa Hospice contacted Dreamweaver Foundation for a little help!
All week it rained and rained. We were wondering if we needed a plan b for the outdoor photo session. But, the day came and the sun was shining! Maggie from C41 spent an hour at Bayliss Park in Council Bluffs capturing the love between Kathy and her family. Finally, it was time for lobster and cheddar biscuits!
Just a couple weeks later, Dreamweaver Foundation Dream Coordinator delivered Kathy her beautiful family portraits. She kept saying, “This is my family, this is my family.”
“We felt so special on this day. It was the best birthday in a long time.”
